Caring for your Knife
Everything You Need to Know
Best quality kitchen knives are a significant investment. We encourage our customers to take care of their knives, so they will be your culinary companions for years.
How to wash your knife?
These knives are very carefully manufactured, and deserve to be cared for. A good sharp knife will stay sharp for a long time if you care for it.
Wash your knife in hot soapy water as soon as you can, dry it, and put it away. Dishwashers are not kind to sharp kitchen knives, we urge you to wash your knife by hand!

Best way to store your knife?
Sharp knives must be stored safely - safe for fingers and hands of the people using your kitchen, and safe for the fine edge and beautiful handle of the knife! That means a knife block, magnetic knife rail, or in-drawer knife block is ideal.
Keep each knife in it's own spot, with blade edge well away from any other blades.

What should I cut on to?
We like wooden or polyethlene (hard plastic) chopping boards. We keep a separate board for cutting raw meat and poultry - a red polyethylene, so it's easy to remember which is which.
Like the knives, wooden chopping boards are best washed in hot soapy water immediately after use, and allowed plenty of space to dry thoroughly. Keep your wooden boards in good order, if they split or have cracks, get a new one.

How to sharpen your knife?
We're working to source a good quality set of knife sharpening stones and a holding guide. Check back with us to source these.

Sharpening your own knives on a whetstone is a meditative and rewarding thing to do.
